- Make a thick batter with Curd and Semolina. Add salt to it. In a pan, heat oil and crackle some Mustard Seeds. Add Curry Leaves and Green Chillies next.
- Followed by grated Ginger and Coriander Leaves. Mix well and add this tempering to the Idli batter. Mix well and set aside. In a vessel, heat about 2 to 3 cups of water.
- Grease the Idli plates, place a fried cashew on each. Add the Eno fruit salt just before steaming the Idlis. Give a light stir and add a ladleful of batter in each depression of the Idli plate. Steam these for about 18 to 20 minutes on a medium high heat to high heat.
- Do not open the lid immediately. Take some time to take them out from the plates. Serve them hot with Peanut Chutney or Coconut Chutney for a healthy wholesome breakfast.
