- Preheat the oven to 450 F.
- Place the chicken in a Ziploc bag or between two sheets of plastic wrap and flatten it out to 1/4 inch thickness using a meat tenderizer. (Note: You can use a heavy pan or a rolling pin if you don't have a meat tenderizer.)
- Measure out each of flour, egg and breadcrumbs in 3 separate plates/containers.
- Season flour with salt, pepper and cayenne pepper. Season the breadcrumbs with thyme. Mix each well
- Dip each piece of chicken in flour, shake off excess, dip in egg and then into the breadcrumbs. Coat well and press lightly with your hands to make sure breadcrumbs are well coated
- Place the breaded chicken on a baking tray lined with a rack and bake for 9 minutes or until chicken is cooked. Flip the chicken and bake for three more minutes. Serve hot and enjoy.
