  1. Wash the spinach and cut the stems off. Boil water and blanch the spinach for 2 mins and immediately put them into ice cold water and set aside
  2. In a blender add the spinach, mint leaves and ginger and make a smooth purée
  3. In a wok heat butter and add Wheat flour. Stir and add milk, keep stirring until lump free and thick in consistency
  4. Add bay leaf, black pepper powder, salt and stir
  5. Add the spinach purée and mix well. Add a little cream and set aside
  6. Garnish with more cream and chilli flakes and enjoy a comfort food
