  1. Take 500 gm Raw jackfruit
  2. Get 4 Boiled Potatoes (medium sized)

  5. Make ready 1 tbsp Garlic paste
  6. Prepare 1 tbsp Ginger paste
  7. Make ready 1 tsp Cumin powder

  9. Prepare 1 tsp Kashmiri mirch powder or Red Chilli powder (adjust according to your tolerance)
  10. Get 1/2 tsp Turmeric powder
  11. Make ready 1/2 tsp Garam masala powder
  12. Take 1 tsp Roasted Cumin seeds powder (Dry fry the cumin seeds on medium heat, until a bit darker in colour. Grind until fine using a food processor.)
  13. Take to taste Salt
  14. Make ready 1/2 tsp Sugar
  15. Make ready 1/3 cup Mustard oil
  16. Make ready 2 Bay leaf
  17. Make ready 2 Dry red chillies (broken into halves)

  20. Prepare 6-7 tbsp Besan/Gram flour
  21. Prepare 3/4 cup Water (approximately)
  22. Make ready Use Powdered Rusk or fresh breadcrumb or powdered Cornflakes to coat the Croquettes- Any of these will work

Steps to make Jackfruit Croquettes:
  1. Cut raw jackfruit into cubes, wash well. Now in a pressure cooker boil the jackfruit pieces with enough water (water level should be up about 1″ from the jackfruit pieces). Turn off the heat after 2 whistles. When the pressure has reduced, open the cooker and transfer the boiled jackfruit pieces to a strainer, keep aside.
  2. Mash the boiled potatoes and keep aside.
  3. Heat mustard oil in a deep frying pan or kadai (nonstick preferably). Temper with bay leaves, cumin seeds and dry red chillies. Once it splutters add sliced onions and little salt, sauté on medium heat until light brown in colour.
  4. Add ginger-garlic paste, cumin powder, coriander powder, kashmiri mirch powder, green chillies and turmeric powder. Mix and fry on medium heat until the masala starts leaving oil (1-2 minute max).
  5. Now add boiled jackfruit and salt. Mix well, cover and cook on low heat for 10-12 minutes. Keep stirring in between.
  6. Add ¼ cup of water, mix well and mash the jackfruit mixture with a hand smasher. Next to add mashed potatoes, garam masala powder, roasted cumin seeds powder and sugar, mix well. Keep cooking uncovered on low heat for 2-3 minutes more. The Jackfruit Croquettes mixture is done now. Remove from the heat and transfer to a plate.
  7. Discard the bay leaves from the croquette mixture. Now start making croquettes from this mixture, keep them aside.
  8. In a bowl, add besan and water, whisk well to form a lump free thin batter. Dip each croquette in this besan batter and then roll into bread crumbs. Repeat the steps again (dipping+rolling).
  9. Heat 1 cup of vegetable oil in a deep frying pan. Fry the croquettes on medium heat until golden brown. Drain on paper napkins. Serve Jackfruit Croquettes immediately with Kasundi /tomato ketchup and some sliced onions.
