- Remove plantain peel, slice into 4 corner cubes, set aside; wash and dice pepper, onion and scent leaf and place them in separate bowls; wash and debone smoke fish and shred into big chunks and set them aside
- In a medium pot, add already diced plantain and little water enough to cook the porridge
- Once it’s boiling and plantain is half way tender add onions, pepper, knorr cube and salt at this point do not stir
- Allow it cook for about 5 minutes then add smoked fish and crayfish and then your palm oil, cover the pot without stir and allow it cook for 4 to 6 minutes
- Stir your plantain porridge and finally add your scent leaf if you have turn off heat almost immediately; stir everything together and serve while hurt.
