- Keep the water to boil in a vessel.Put salt and ghee in it. When it boils turn off the gas.
- Then put the rice flour in it.Mix it and then close it with a lid and keep for 5 minutes.
- In the meantime wash the Palak leaves and blend them in a grinder. And strain it and keep aside.
- Then once cool put the Palak puree in it and mix well. Knead the rice flour. Then grease the Idli plates.
- Now put a big ball of the kneaded rice flour in the Idiappam press.
- Put little coconut on each Idli cavity. Then press the rice flour in the Idiappam press in circular motion. Repeat on each cavity.
- Then top it with some more coconut.
- Steam it for five to 10 minutes.
- Serve hot with chutney of your choice. Can be had plain or with sugar or if you wish can make a simple tadka and put on top.
- Palak Idiappam is ready.
